EGG WHITE AND AVOCADO SALAD

This delicious egg white and avocado salad is low in calories by using only egg whites and a combination of mashed avocado, a little greek yogurt and dijon mustard to substitute the mayo.
For a little crunch we added celery, green onions, and crunchy turkey bacon (which is optional).
It makes the perfect, completely clean, low-calorie, healthy lunch that you won’t feel guilty about eating.
You can eat this on its own, over a leafy salad or an open-faced sandwich (add a little arugula for added flavor). The fat in this recipe comes only from the avocado which is a healthy fat and needed in any diet.
Make sure any leftovers are refrigerated and covered securely with plastic wrap so the avocado doesn't turn brown. Press the plastic wrap into the salad (touching it) to seal in the freshness. Lasts three days.
EGG WHITE AND AVOCADO SALAD
Serves: 4
INGREDIENTS
- 10 hard boiled egg whites, diced
- 1 avocado, mashed
- 1 Tbsp Dijon mustard
- 1 Tbsp plain Greek yogurt
- 2 tsp. fresh lemon juice
- ⅓ cup green onions, chopped
- ½ cup celery, diced ½ tsp. paprika
- ¼ tsp. pepper
- Pinch of sea salt
- 2 slices uncured turkey bacon, chopped
INSTRUCTIONS
- -In a large bowl, mash avocado and add in mustard, Greek yogurt and lemon juice, mixing until smooth.
- -Stir in green onions, celery, paprika, salt and pepper and set aside.
- -Begin chopping the egg whites, discarding the yolks, and fold into the avocado mixture until completely combined.
- -Add in the turkey bacon and serve on bread of your choice with fresh arugula, enjoy!
